My brother and I used to eat this all the time when we were kids, and to this day it's one of my absolute favorite comfort meals. It's so quick and easy to throw together. It was perfect for a rainy late-fall evening, and Joe and I devoured every single bit of it!
Biscuits over Creamed Chicken
Source: my mom
2 cups cooked, shredded chicken
1 can condensed cream of chicken soup
1/2 cup sour cream
1/2 cup milk
Salt and pepper to taste
1 can peas and carrots
1 can creamed corn
1 cup shredded cheddar cheese
6 refrigerated biscuits, cooked according to package directions
1. Combine chicken, cream of chicken soup, sour cream, milk, salt and pepper, peas and carrots, and creamed corn in a large, high-sided skillet over medium heat. Heat to boiling, stirring frequently. Stir in cheese.
2. Nestle the biscuits in the creamed chicken mixture, or pour the creamed chicken over the biscuits.

Yum! This seems pretty similar to my grandmother's chicken and dumplings. I have never been able to perfect her way of making that, so maybe I'll give this one a shot now that the weather is nice and cold!
PS. 50 degrees IS cold! I have never been to Ohio, so I have nothing to compare it to! ;) Stay warm out there and thanks for all these yummy recipes!
Just coming back to say: I made this, it was yummy, it's now part of my recipe book. Thank you for all these yummy things!
I'm so glad you liked it! Recipes like this just remind me of home.
Thanks for posting this. I am dying to try it. Keep the recipes coming, I love seeing them Cassie!
Delicious and so comforting. I can't believe I just made this for the first time. It will become a regular in our house. Only variation I made was not using the cheese--it was delicious without it! Oh, and I used frozen peas & carrots, but I don't think that should've impacted the taste. :) Great recipe--I practically licked my plate clean!
How many servings?
